How much food inventory to purchase for event

Will be a first time vendor at a major food festival this summer in Southern California. Event organizers state 90-100K people on labor day weekend (3 days Fri, Sat, Sun). I'm having a very hard time coming up with a guideline for calculating how much food to purchase. Can anyone give me some tips?
